Beef Enchiladas (Freezer Meal Prep)

One for tonight & one for the freezer 🌮

2 lbs ground beef
1 large can red or green enchilada sauce
1 pack taco seasoning
1 can diced tomatoes or rotel (drained)
1 can black beans (drained)
1 onion, chopped
2 packs of flour tortillas
Shredded sharp or Mexican cheese
2 aluminum pans

Brown beef with chopped onion – drain
Add taco seasoning and water
Add tomatoes and black beans
Pour ¼ can of enchilada sauce in the bottom of 2 aluminum pans
Add beef mixture to tortilla and roll up and place in pan
Continue until both pans are full
Top rolled tortillas with remaining enchilada sauce
Cover with cheese
Let cool before covering with saran wrap and aluminum foil and freezing
Thaw in fridge night before
Cook at 350 degrees for 35 minutes
