Crockpot Chicken Fajitas (Freezer Meal Option)

These always turn out super yummy. 🌮

3 lbs Frozen boneless chicken breasts

1 Bell pepper

1 Onion

1 packet taco seasoning

optional: 1/2 packet Ranch seasoning

  1. Place frozen chicken in the crockpot
  2. Add seasonings
  3. Cook 4 – 5 hours on low
  4. Add vegetables – cook additional 2 hours
  5. Top with Mexican cheese, sour cream, & salsa

Freezer Option:

(Makes 2 freezer Meals)

If you want more chicken just add an additional 3 lb bag of frozen chicken breasts.

  1. Label 2 Gallon size freezer ziplock bags and 2 Quart size ziplock freezer bags
  2. Slice up bell peppers and onions and put in the quart size freezer bags – close bags
  3. Divide frozen chicken amongst the gallon size freezer bags
  4. Add 1 can of rotel and 1 packet of taco seasoning in each bag of chicken – Close bags
  5. Can freeze tortillas also so you have a whole meal ready to go
  6. Put in fridge the night before to defrost
  7. Cook in the crockpot on low for 3-4 hours
  8. Add onions and bell peppers – cook additional 1-2 hours
