30 Day Dinner Challenge: #15

For dinner tonight I had vegetables I needed to use, so decided to make a Sausage & Vegetable bake with mashed potatoes and corn fritters. I only used salt free seasoning and it turned out really good.

And of course you have to have sweet tea with fritters. 😎

These fritters are definitely some deep fried goodness. 🀀

Corn Fritters:

1 can creamed corn

1 can sweet corn, drained

2 eggs

7 TBSP all purpose flour

1/2 cup sharp shredded cheese (optional)

large spoonful of sour cream (optional)


Salt & Pepper

  1. Mix all the ingredients together except for the oil

  1. Heat oil in a skillet

  2. Drop mixture by the spoonful

  3. Cook until golden brown then flip and continue to cook the other side
